- 1 head romaine lettuce, torn, rinsed, and dried
- 1 small Granny Smith apple, cored and thinly sliced
- 3 green onions, cut into thin rounds
- ½ cup pumpkin seeds, toasted (optional — omit if you don’t tolerate seeds)
- ¼ cup raisins or dried currants
For the dressing:
- 4 Tbsp extra virgin olive oil
- 2 Tbsp raw apple cider vinegar
- Sea salt and black pepper, to taste
Directions:
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Rinse the squash and cut it in half lengthwise. Scoop out the seeds with a spoon.
- Place each half flesh-side down on a cutting board and slice into ¾-inch thick pieces, they’ll look like crescent moons.
- Place the slices on the baking sheet, drizzle with olive oil, and sprinkle with sea salt. Toss to coat, then spread into a single layer.
- Roast for 25 to 30 minutes, or until tender. Let cool completely before adding to the salad.
- In a large salad bowl, add the romaine, apple slices, green onions, toasted pumpkin seeds, and raisins.
- Add the cooled roasted delicata squash and toss everything together.
