Robin’s Chicken & Fresh Vegetable Salad

Serves 4

Chicken (1 breast and 2 thighs, baked and chopped)
Tamari, wheat free
Water
1/4 head purple cabbage chopped
4 green onions chopped finely
2 leafs of kale chopped finely
1/8 cup sesame seeds lightly toasted
2 carrots peeled (or washed well) and chopped
1/2 cup raisins
1 large apple chopped
Dressing
1/4 cup olive oil
2 tbls dijon mustard
1 tbls maple syrup
Bake the chicken with a little Tamari (2 tbls) and about 1/4 cup water (to keep it moist) at 350 degrees for 20 minutes. Remove from oven and let cool while you chop the vegetables and make the dressing in a little jar. Combine everything in a bowl, cut up chicken into small cubes, toss and enjoy! I put it on some organic baby greens as you can see in the picture.
