I just returned from a backpacking trip in Yosemite and I loved my breakfast so much that I want to share it. Warm, building and delicious you will LOVE it!
- 1 handful rolled, gluten-free oats
- 1/2 handful Lydia’s Organics Grainless Apple Cereal (or any other kind of Lydia’s grain-free cereals)
- 1/3 apple, chopped
- 1/2 scoop (10 grams) whey protein powder or non-dairy protein powder
- 2 tbls coconut milk (or to taste/texture) (try the So Delicious, unsweetened)
- 1 tbls ground flax seed
Put oats and 1/2-3/4 cup water in a small saucepan. Bring to boiling and turn off heat. Add the remaining ingredients, mix and enjoy. It will hold you until lunch, give you adequate fiber, fat, protein and carbs for a fabulous morning! (I hiked miles on just this breakfast carrying a heavy backpack 🙂
