Black Mission Figs from My Garden – Dinner!

Yes, that’s right, I just harvested the very first ever Black Mission Figs from our garden today! We planted one tree about two years ago and just this year we have fruit. I LOVE figs (if you can’t tell already.)  We also have a Kadota fig tree that has been producing fruit for years. Figs are high in natural simple sugars (so great for naturally sweetening dishes), potassium, calcium, magnesium, iron, copper, and manganese. This morning I used some in my crockpot for lunch and dinner today:

Robin’s Chicken & Figs

1 Whole Chicken cut into thighs, breasts and drumsticks go here to learn how
2 tbs turmeric
1 tbs sea salt
2 cans fire-roasted tomatoes diced
2 sweet potatoes (small to medium) cut into chunks
2 red onions peeled and quartered
4 large cloves garlic peeled and chopped
10 Figs, tip cut off, quartered
2 cans black beans

Place all ingredients, vegetables first, into the crockpot. Top with tomatoes. Cook on high for 4 hours. Enjoy!
