I just returned from Mexico with some friends for New Year’s and we were talking food. Laurie was telling me about her 10 bean soup and it sounded so delicious. I don’t eat beans or grains often but beans are so good for you and are so inexpensive. I got to thinking about what would make a delicious soup and be healing at the same time.
Here’s what I came up with…I made it this morning before the sun came up and the house smells delicious. It took 30 minutes to pull it together but it needs to cook for a little longer than that. It’s a great winter soup because it’s immune supporting, boosts thyroid and digestive function, and is great for energy.
