Scallops Sauteed in Garlic & Bacon

Oh, my goodness did we have a delicious dinner last night! Takes about 15 minutes to put together (if the brown rice is already cooked). Here is my creation (inspired by a family member) for you to enjoy too…

Serves 4

1 cup brown rice cooked to done in separate pot
1/2 red cabbage chopped
4 green onions diced
3 strips nitrite free bacon diced into small pieces
4 cloves garlic, minced
2 tbls wheat-free Tamari
1 package frozen scallops from Trader Joes
handful organic arugula
handful organic spinach

Sauté bacon in a pan for 3 minutes and add cabbage and green onion. Sauté for 8 minutes. Add garlic,  scallops and tamari. Cook until scallops are done – cover to cook through (about 5 minutes or so).

Use a shallow bowl to serve. Add a handful of each type of green (spinach and arugula) to each bowl. Put 1/2 cup brown rice on the greens and then spoon the scallops and cabbage mixture over the brown rice. Enjoy!
