It’s Sunday morning and time to use all the veggies still remaining in my vegetable drawer so I can fill it with more fresh veggies for this coming week. Here is what I found in my kitchen to make a big pot of soup for the week:
4 stalks of celery with leaves
2 sweet potatoes
2 russet potatoes
1 bunch cilantro
1 bunch Italian parsley (what’s left)
4 zucchini
3/4 head cabbage
1 cup green lentils
1 cup red lentils
2 pieces kombu (for great minerals)
sea salt and herbed seasonings to taste
I ground all this up in my food processor (except the lentils and kombu) to make a thick chunky soup. I filled my big pot about 1/2 way with purified water and then added all the above ingredients. I will finish seasoning when the lentils are done cooking, about and hour. I will remove and toss the kombu into my compost when done cooking. Then I’ll have some delicious soup that I can sip on all week to help keep my body more flexible, relaxed and nourished. It contains a lot of fiber, protein, vitamins and minerals.
